Welcome to Esther Schultz Nutrition

I'm a California-trained Registered Dietitian based in Jersey, UK. I offer preventative and medical nutrition therapy to help clients heal by harnessing the power of food.

I work with people who are dealing with ongoing or complex health concerns, particularly gut issues, autoimmune or inflammatory conditions, chronic lifestyle diseases, and persistent symptoms that haven’t fully responded to conventional approaches, like fatigue, hair loss, vertigo, migraines, bloating, anxiety and depression. Many of the people I support have tried multiple strategies already and are looking for a more individual, investigative approach.

My work is firmly rooted in evidence-based practice and I often collaborate with medical doctors, consultants, and other health professionals to ensure clients receive well-rounded, appropriate care. I am careful to identify clinical red flags and will always refer clients back to their GP or specialist when further medical investigation or treatment is needed. Nutrition works best as part of a wider healthcare picture, and I see collaboration as essential rather than optional.

My Philosophy

Food is incredibly powerful – physically, mentally and emotionally. It has the power to prevent or create chronic disease. It has the power to contribute to or alleviate mental illness. It has the power to make us feel guilt, shame, anxiety, happiness, joy and many other intense emotions. The foods we choose to eat have a profound effect on our physical and mental health. Every cell in the human body is created and energized by the nutrients we put in.

And yet, most of us have been taught next to nothing about food and nutrition. Because of this lack of information, working out what we ‘should’ be eating can be confusing, stressful, and fraught with guilt and shame. My goal is to help people eliminate the stress and guilt associated with food choices, so that they can feel confident about what they put in their bodies. I focus on personalized lifestyle and dietary changes because we are all unique. I turn the nutritional science into small, simple, sustainable changes that have a big impact over time.

As the former dietitian for DreamWorks and NBCUniversal, I have worked with a diverse range of clients. I have also been trained on the use of the low FODMAP diet for IBS by Monash University.
